How About A Salad What Can Take The Place Of A Meal?
Jeez, the Holidays came and went on by like a 18-wheeler with a reefer load of frozen meat. So, now everybody's sittin' around tryin' to figure out how to shed 20 pounds or so without breakin' away from the playoffs and the Super Bowl Show, whatever. Well, that jes' might be possible with this low-cal (Low-cal from Leo? Didn't think it possible, did ya'?), German Potato Salad. You can sit yerself right in front of the Big Screen and eat this right off the TV tray.
Here's what you'll need:
4 medium sized potatoes, scrubbed clean or peeled, whichever; cooked tender; and sliced fairly thin.
For those who ain't worried 'bout no calories, go on and use about 2 bacon strips, fried up crisp and broken into bits. Or, fer them what cares about them pinched inches use a couple of teaspoons of artificial bacon bits, ain't no calories in them things.
1/2 teaspoon Seasoned Salt
1/2 teaspoon ground Black Pepper
½ teaspoon celery seed
1 teaspoon dry mustard
1 tablespoon dried chives
1 tablespoon dried onion flakes, reconstituted in a small amount of water
¼ cup vinegar
2 tablespoons water
1 teaspoon sugar or an equal amount of sweetener
Now that you got all that here is what to do with it:
Slice the potatoes up in a nice sized salad bowl. Sprinkle with the bacon bits, salt, pepper, celery seed, mustard, chives and onion. Mix all that up well
In a small pan heat up the vinegar and water. DO NOT BOIL. Remove from heat and mix in the sugar or sweetener until dissolved. Pour that over the potatoes and toss to coat them all.
You can serve this hot right there in front of the big screen while yer watchin' the Rams win another super bowl, whoever. That should serve 4 calorie counters.
