Penny Pinchin’ Breakfast Treats
So, you got some leftovers? Breakfast stuff that is, jars with a leftover spoon of stuff you forgot in the back of the ice box. Look around and maybe this is the day to clean out or rescue what you haven’t seen in the box for a while. If it is leftover jelly it’s probably good stuff, unless it’s got mold on top. Jelly and preserves don’t get bad, just forgot about, and maybe turn sugary. Well that’s still good since it is sugar, it ain’t gone bad, just a jar of sugar. So let’s do something with it. We’ll just make some goodies out of all that. And a shot of brandy will fix all this up real good. Dig out all them leftovers and let’s get started.
Here’s what ya need to start:

1 can large sz biscuits

Various nearly empty jelly jars

2 Tbsps spiced Rum or Brandy (or fruit juice)

½ stick of butter

2 Tbsps granulated sugar

2 Tbsps Cinnamon
Here’s what ya do with it:
Melt butter in 8 or 9 inch pie plate
Place rum or brandy in the nearly empty jelly jar. (Preserves will also work.) Shake to clean fruit residue and pour into the next jar. About 3 jars should yield around 2 Tbsps of jelly plus the rum. You can mix flavors, or separate berry from pit fruits (pears, peaches, apricots, and add a bit of nutmeg) for a different time and different flavor treat.
If using the large sz biscuits, tear or cut into fourths, if using the small sz biscuits use 2 cans and cut in half. Dip and turn in the melted butter pushing loosely together to cover bottom of pie plate.
Pour jelly mixture over the top, then sprinkle heavily with the sugar/cinnamon. (Save leftover sugar/cinnamon in a shaker to use on buttered toast or hot cereal.)
Bake at 350° in middle of oven about 15 minutes.
Serve hot, cold, or warmed over in microwave with a hot breakfast beverage.
