Cake
Ok, this is May and May is the month of my birthday, and
also Mary’s birthday, so I am going to get fancy here and make
a cake. My favorite cake, that is, Angel Food Cake. I remember
when I was a kid, my mom always remembered my birthday by
making me an Angel Food Cake (always considered me a Little
Angel), and that was an experience by itself. Back in those
days things were not automatic, no oven automatic controls, no
automatic shut off when things were done, no automatic nothin’
nohow. So when mom baked a cake everybody had to stay out of
the kitchen, ‘Don’t walk in here the cake will fall.’ ‘Don’t
run or jump around in the house, etc, etc, etc. the cake will
fall. So the best place to go was somewhere outside and leave
mom to her baking and dream of the outcome. So I am going to
head for the patio and dream of those days and come up with a
great recipe for an Angel Food Cake everybody will like.
Here is what you will need for the cake:
- 12 egg whites, maybe 13 if they are small eggs
- 1½ tspns Cream of Tarter
- ¼ tspn Salt
- 1 cup Sugar
- 1 tspn Vanilla Extract
- ½ tspn Almond Extract
- 11/2 cups confectioners’ sugar (powdered sugar)
- 1 cup cake flour
And this is for the Glaze:
- 1/3 cup butter
- 2 cups confectioners’ sugar
- ½ tspn ground Cinnamon
- 2 tblspns Kahlua
- 2 tblspns Tequila
Ok, here is how we do it:
In a mixing bowl beat the egg whites, Cream of Tartar, and salt
until soft peaks form. Add sugar, about 2 tablespoons at a
time, beating well after each addition. Beat until smooth and
glossy and stiff peaks form. Add extracts and beat on a low
speed, if using mixer. Combine confectioner’s sugar and flour
and gently fold into egg mixture. Pour mixture into an
ungreased 10 tube pan. Bake on the lowest rack at 375° for 35
to 40 minutes until top is golden brown and cracks feel dry.
Immediately invert cake in pan to cool completely. Loosen
sides of cake from pan and remove.
For the glaze, melt the butter in a saucepan, stir in
confectioner’s sugar and cinnamon. Add the Kahlua and Tequila
and mix well Drizzle Glaze over cake. Enjoy Our Birthday an’ Take Care Now, Ya’
