Italian Breaded Pork Chops
Well, it had been a long time, but one day when I was least expecting something, any thing at all, that is, who should pop up out of the clear blue sky and warm southern breezes, but my Dear Sweet Italian Fairy Godmother. Who else would pop up out of the clear blue sky and warm southern breezes but her, since all them southern breezes are favorable to the Mediterranean Sea near Sicily and the boot heel of Italy, wherever. Any way she came fluttering up on the patio, where I was enjoying a cool one.
“Hey dere, li’l bambino, long time no see, what you been up to all dese long months I no see you?”
“Well gee, Dear Sweet Italian Fairy Godmother, I thought you had imparted everything I ever needed to know about Italian cooking and such other finer things of life as might be necessary for me to comprehend., whatever.”
“No, you a sad case, I never gonna’ get done with you.”
“Sad case”?
“Yea, you never remember anyting I ever tell you.”
“What do you mean I never remember anything? I already put out 2 cook books with enough Italian goodies in them, and other good things that most folks would fatten up on in no time.”
“Yea dey fatten up alright, because you use all dat fat stuff”.
“Yea, and where do you think it all came from? You imparted all those fat recipes on me.”
“OK, whatever, but now I give you something good, what ain’t too fat”.
“Well, lay it on me, Dear Sweet Italian Fairy Godmother, and I’ll sure pass the word”.
And with that and a wave of her magic wand, she took off for parts unknown. But, now I have a new recipe for Italian style breaded pork chops, whichever.
I’ll make this simple and call these Italian Parmesan Breaded Pork Chops, that’s simple enough,
Here is what you need for a family of 4
8 nice size boneless pork chops
4 tablespoons grated Parmesan cheese
1 cup bread crumbs
Salt and pepper to taste
1 egg
3 tablespoons milk
½ tablespoon butter
And here is how we’ll do it.
Combine the parmesan cheese, bread crumbs and the salt and pepper. Beat egg and milk and place in a flat dish. Dip chops in crumbs, then the egg mix and then back in the crumbs again. Melt the butter in a baking dish, and place chops in it. Bake at 325º for 1 hour, turning after 30 minutes. If chops are pretty thick and not too brown, cook a bit longer. Yea go ahead and serve with all the veggies the kids hate.
