Jalapeno Pie

Since my dear sweet Italian Fairy Godmother seems to have deserted me over the past few months, I have had to reach back into my repertory of recipes. Thus I found a great recipe passed on to me from various cook offs. Used to get all sort of various concoctions considered to be safe for human consumption. Sometimes I wondered about that, but before I ever passed on any of these gastronomical garnishments, I usually tried them myself first. Thus if I were debilitated by such so called delicacies, I would not be blamed for killing off an entire population while passing on some untested tidbit. Call me the La Dolce Vita testing laboratory if you will, but usually if something is good to eat even if it may not be good for your fat level or your cholesterol level, it by itself will not do you in. In any event if I get too fat, I usually go on my gin diet for a week. That is one fifth of gin (bathtub or otherwise) a day for a week, nothing else, which will usually shed at least 25 or more pounds. However as the saying goes, check with your doctor first. Never take my word for anything I tell you, except that my recipes are tested and approved by La Dolce Vita, a renowned decades old establishment that has survived numerous cook outs and has never done in any judge of such events to this day. Thus I stand on that record even if none of the judges ever showed up for a second year of judging such events. It's their own fault for not appreciating such delacacies as are turned out at these gastronomical gatherings. So here is a recipe from the past, which has not done in any event judge (that I know of). Nor has it ever done me in to date (that I know of), even if I am unconscious at times.

So let's make some Jalapeno Pie which is a great eye opener on a cold morning.

Here is what you will need:

    6 or 8, depending on their size, fresh Jalapenos, seeded and sliced into thin strips.
    2 cups, about 8 oz. grated, sharp Cheddar Cheese.
    6 eggs, beaten until they are frothy.
    2 tablespoon Half and Half or coffee cream

And here is how we do it:

Lightly butter a pie pan. Spread the cheese over the bottom. Place the sliced Jalapenos evenly over the cheese. Beat the eggs and cream together until frothy and pour that over the Jalapenos and cheese. Bake that in an oven heated to 275° for 45 minutes. Slice into pie wedges and serve warm.

Now that was easy wasn't it? And it is good too.

A cup of Irish coffee with this will make your day.
